Yum. Key Lime Gummies! I’m pretty sure it’s obvious how much I love homemade gummies …. Vitamin C Gummies, Carrot Ginger Gummies…  these Key Lime Gummies are another of my favorite flavors. They are a mouthful of flavor. The citrus of the lime, zippy and bright, is balanced with the creamy, mellowness of the coconut milk. And, as they are made with grass-fed gelatin, with its amazing gut healing support, these gummies are a health food disguised as a fun treat.

Beef gelatin has an amino acid profile very similar to collagen peptides. It provides all the same benefits as collagen peptides and has the added benefit of taking longer to digest. This added time gives it greater opportunity to heal gut-permeability, coat the small intestine and help to ease digestive symptoms such as bloating, gas, pain, and inflammation. Beef gelatin is excellent to include in autoimmune protocol (AIP) and gut healing diets (GAPS). It moves through the digestive system a little further before being completely absorbed and may help encourage proper digestion of certain foods.

Blooming is a simple process that helps to prepare the gelatin for mixing into food. You simply soak the gelatin in room temperature liquid for 3-5 minutes to bloom, or plump up, the gelatin granules. Once the gelatin has bloomed you warm it slightly, on the stove or add hot liquid, to completely dissolve the granules. Once cooled or chilled, it sets up perfectly with a jello-like consistency.

Instructions
  1. Mix all ingredients into a saucepan until smooth.
  2. Let the mixture sit for 3-5 minutes in order for the gelatin to bloom.
  3. Warm the mixture while whisking gently. Do not let boil.
  4. Pour into an 8x8 baking dish or use small silicone candy molds if you have them. Refrigerate for 1-2 hours. 30-minutes may be enough time.
  5. Once firm cut them into small squares or remove from molds. Store in an air-tight container in the refrigerator for up to 5 days.
